Surprising us like a snow storm in spring, the Honduras Belén changes every day. Sometimes creamy, sometimes fruity, sometimes chocolatey, but always a smooth body and maple sweetness. It is a collection of crops gathered from smallholder farmers who live outside the town of Belén in the mountains of western Honduras.
