One way coffee is traditionally processed in Brazil is to let the coffee cherry dry completely in the sun before milling the fruit off of the green coffee bean. In doing so, the coffee beans inside take on the fruit flavor of the cherry. The subtle dark fruit notes in this cup come from this process. Drinking it in the afternoon with shortbread has never failed us. Enjoy!
